I like to call these breakfast because they are so packed with healthy things like nuts, dried cherries and oats. My current obsession.
Cherry Pecan Oatmeal Cookies
1 1/2 cups pecans, chopped
2 sticks of butter
3/4 cup of brown sugar
3/4 cup of sugar
2 eggs
1 tablespoon of vanilla
1 1/2 flour
1 teaspoon baking powder
1 teaspoon of cinnamon
1 teaspoon salt
3 cups of oatmeal
1 1/2 cup of dried cherries, chopped
Preheat the oven to 350 degrees.
Toast pecans on a sheet pan in the oven for 5 minutes. Set aside to cool.
In a mixer, cream together butter and sugars. Add eggs and vanilla. Slowly add flour, baking powder, cinnamon, salt and oatmeal. Mix until just combined. Stir in chopped cherries and cooled pecans.
Scoop onto baking sheet lined with parchment paper (find here). Bake for 12 to 14 minutes until golden.
Cookie Monsters
You can turn any cookie into monsters by sandwiching them together with buttercream + eyes fashioned out of white chocolate chips + mini semi sweet chocolate chips.
