Game Day is not complete without a chips and dips. My favorite dip of all time is Classic Creamy Spinach Dip. You can make so many variations of this – add artichokes, crab, red pepper, etc. It is surprisingly simple to make – just takes 10 minutes. I also like to serve it with sour cream and salsa with tortilla chips.
Creamy Spinach Dip
Always the First to Go 4 cloves of garlic, minced 1/2 white onion, diced 2 tablespoons of olive oil 1 package of frozen chopped spinach 2 cups of heavy cream 2 – 8oz. blocks of cream cheese, softened 1/2 cup of parmesan cheese, grated salt & pepper 1 bag of tortilla chips In a saute pan, saute garlic and onion in olive oil until the onions are transparent. Squeeze out water from spinach, then add it to the garlic and onion and continue to cook for a minute or two. Add heavy cream and bring to a simmer. Cook for 3-5 minutes until cream slightly thickens. Stir in cream cheese and parmesan until smooth. Season with salt and pepper to taste. Serve warm with chips. If you make it ahead of time, transfer it to a baking dish and heat in a 350 degree oven for 15-25 minutes until bubbly.
Let the cream boil and thicken.
Stir in the cream cheese and parmesan cheese. If it is too thick, add milk or more heavy cream.
