Fish Tacos at home :⁠

I don’t do a lot of fish at home because it just never seems to be up-to-snuff. However, we’ve newly found the perfect fish-at-home gateway – fish tacos. I marinate them in garlic salt, olive oil and lime juice, then grill, adding more lime juice and more garlic salt on the grill. We top with pico (made with cherry tomatoes this time of year before real tomatoes are ready) and lots of cilantro. Good tortillas make all the difference. I often stop by a local street taco place and buy a big stack for a couple of dollars then reheat.

Fish Tacos

4 filets of fish (cod, mahi, grouper… anything firm and a little thick)
Lime
Olive Oil
Garlic Salt
Corn Tortillas
Cherry Tomatoes
Cilantro
Sea Salt
Guacamole

Marinate the fish in lime juice, olive oil and garlic salt for 30+ minutes. Grill on each side for 5-6 minutes until cooked through. Serve with cherry tomatoes sliced and tossed generously with cilantro, olive oil and sea salt.
