George’s Famous Peach (and Blueberry) Cobbler

As promised, I’m sharing the recipes from our dinner party when we hosted our neighbor friends, Annie and George.  Earlier this summer George brought us his famous Peach Cobbler – it had a buttery dense cake topping with almond extract.  It was fabulous.  George made it for us before peaches were at their peak, and he added blueberries to help fill out the flavor of the fruit.  Fabulous.  We’ve been talking about it ever since.

He was so nice to share the recipe :

George’s… “Corky’s Cobbler”

Serves 6

1 1/2 cups sugar

4 cups fruit (peaches and/or blueberries, see note below)

1 stick of melted butter

1 egg

1 cup self rising flour

1 teaspoon almond extract

In a buttered casserole dish, sprinkle 1/2 cup sugar over the fresh fruit and bake at 350 degrees for 1/2 hour.  Mix butter, rest of sugar, flour, egg and almond extract until well blended.  Drop over top of fruit and return to oven to bake for 30 minutes more at 350 degrees.  If you do a combination cobbler, use 3 cups of peaches and 1 cup blueberries.
