Homemade Marshmallows

Homemade Marshmallows & Hot Chocolate Mix is one of my favorite winter treats. It is so much easier than you might think to make homemade marshmallows and really good hot chocolate is even easier. I packaged the marshmallows in our new Long Kraft Boxes with a Clear Sleeve to make them look like a special bakery treat. You can also half-dip them in chocolate to make them extra special.

I used our wrapping paper to line the boxes so a little pink print would show through.

Homemade Marshmallows

3/4 cup water (divided)
3 envelops of unflavored gelatin (Knox)
2/3 cup honey
2 cups sugar
1 tablespoon vanilla
1/4 cup of powdered sugar
butter

In a mixing bowl, combine put 1/2 cup of water with gelatin to soak. Meanwhile, in a saucepan, combine remaining 1/4 cup water, sugar and honey.  Melt together and bring to boil for 1 minute.  Remove from heat.  Using the whisk attachment run mixer on low, and pour the hot sugar mixture over the gelatin mixture.  Whip on high for 10 minutes until white, stiff and glossy. 

Prepare a casserole pan by rubbing it with softened butter to coat.  Pour the marshmallow mixture in the pan and spread evenly.  Let set for 2+ hours.  Dust the top with powdered sugar.  Turn out onto a cutting board.  Butter a serrated knife and cut into squares.  Coat the squares in more powdered sugar until all sticky is coated.

Ultimate Hot Chocolate

1  7.5oz  Giant Hershey’s Bar
1/4 cup of powdered sugar
1 teaspoon sea salt
whole milk

In a food processor or by hand, finely chop chocolate bars until very small pieces.  Toss with powdered sugar and salt.  Store in airtight container or mix with hot milk to serve.
