Pumpkin Spice Cookies or Whoopie Pies | 1 Recipe, 2 Ways

Once fall hits, I want all of the warm spices – in my coffee, and especially in my baked goods.  I want the scent wafting through my kitchen constantly.  These were a big hit for an after school snack last week.  They are the softest things you’ve ever had – like pillows.

The Fall Collection

This recipe is a little preview of some new items that will be available Tuesday for the launch of The Fall Collection.  The collection will include three block print linen collections (a little peek of one here), new candles with nostalgic scents, a line of dish soap, counter spray and hand lotions.  I’ve also sourced new packaging ideas – like the cotton twill tape I used in the packaging above in wonderful autumnal colors.

They are more like the tops of cupcakes than they are cookies, which is why I had the idea to turn them into whoopie pies, as well.

With this one batch, I made a handful of fun whoopie pies to give away as a gift and still had a dozen  cookies to bring to a party that night.  It is a super easy recipe to stir together that will make your kitchen smell like fall.

Soft Pumpkin Spice Cookies with Cream Cheese Frosting
1 cup butter, softened
1 cup brown sugar
1 egg
1 teaspoon vailla extract
1 cup of canned pumpkin
2 cups of flour
1 1/2 teaspoons of cinnamon
1 teaspoon baking soda
1/4 teaspoon of baking powder
1/2 teaspoon of salt

1/2 cup of butter (1 stick), softened
2 ounces of cream cheese, softened
2 cups of powdered sugar

Preheat oven to 350 degrees.  Line three Baking Sheets with Parchment Paper. Cream together butter with brown sugar.  Add egg, vanilla and pumpkin, mix until combined. Add all dry ingredients : flour, cinnamon soda, powder and salt.  Mix together just until combined. Using a Small Scoop, scoop out 8 cookies per sheet.  Bake for 13-15 minutes until cooked through.  Cool. Parchment Paper Sheets, 100 for $10 Baking Sheets Small Scoop For frosting stir together ingredients until smooth.  Do not overheat – you want it smooth without air. Frosted Cookies : Frost tops of using an Offset Spatula Pumpkin Whoopie Pies : Sandwich two cookies together with a generous amount of frosting. I packaged the whoopie pies in a medium Baking Basket and then a Large Cello Bag Tied with Twill Tape.

The cookies were boxed in a Small Kraft Window Box and tied with Twill Tape.
