Shrimp Scallop Parchment Packets with Lemon, Chive & Potatoes

When I’m hosting a dinner party I love when everything is made individually – it is so much easier to prepare portions rather than just guess how much everyone will take.  These Shrimp & Scallop Parchment Packets are such an elegant solution to a dinner party.  Your guests will be thrilled to have their very own package to open for dinner – and it is fun to have something so rustic looking contain an elegant, fresh and flavorful dinner. Each packet contains sliced potatoes, bay scallops, jumbo shrimp, lemon, garlic, chive and butter… an entire meal!  The lemon and garlic create an amazing aroma in the kitchen while they are baking in the oven.  Your guests will be shocked to find such a wonderful meal wrapped in such a cute package.

Shrimp & Scallops in Parchment with Lemon, Chive & Potatoes; serves 4

4 Jumbo Shrimp

4 dozen Bay Scallops

4 Potatoes, I used purple for a bit of color, but Yukon Gold or Sweet Potatoes would work well too

1 Large Lemon, cut into 8 equal slices

4 Garlic Cloves, minced and divided

8 Tablespoons of butter

Chives

Salt & Pepper

Baker’s Twine, makes for a pretty presentation, but not necessary

Lay flat 4 pieces of parchment paper.  Slice each potato into 1/4″ slices and lay slightly overlapping on each parchment paper.  Season with salt and pepper.  Top with one jumbo shrimp, Bay scallops, 2 lemon slices, one minced garlic, 2 tablespoons of butter and one sprig of chives.  Pull sides of parchment together and fold down 2 to 3 times.  Tuck ends towards each other then use twine to tie like you would a package to secure contents.  The twine is not necessary, but make certain you have folded sides down so that the packets do not open allowing the steam to escape.  Place your packets on a rimmed baking sheet in a 350 degree oven for 15 to 30 minutes.  *Cooking time will depend on how thick the shrimp and scallops are.
