Strawberry Rhubarb Margarita

I recently went to dinner with some girlfriend at True Foods Kitchen and had the most delicious Rhubarb Strawberry Margarita.  It was so fresh and not too sweet – so yummy.  I made the base without alcohol, so those could added tequila if they wanted.  Emma loved it (without the tequila!), too!  She was excited to sugar/salt everyones rim and garnish with mint and strawberries.

Strawberry Rhubarb Margarita

2 cups of rhubarb, chopped into 1-inch cubes
2 cups of strawberries, hulled and halved
3 tablespoons of sugar
3 cups of water
…..
tequilla
flaked sea salt
sugar
mint
lime
ice

Make Ahead : In a saucepan, simmer together rhubarb, strawberries, sugar and water. Cook for 10 minutes on low until the fruit cooks through. Strain through a mesh strainer, mashing the fruit through to get all of the juice out. Chill syrup for an hour.

To mix drink, swipe rim with lime. Combine a few tablespoons of sugar and salt on a plate, then dip in the top of the glass to salt the rim. Fill glass with ice. Pour 1-2 oz of tequila, then top with rhubarb syrup. Garnish with squeezed lime and mint.
