Avocado, Sweet Corn and Black Been Salad Recipe 3 avocados, large dice 2 medium tomato, large dice 3 ears of corn, cut off of the cob 10 green onions, sliced 1 can of black beans, drained and rinsed 2 limes, juiced 3 tablespoons of olive oil 2 teaspoons of sea salt 1 teaspoon of black pepper In a bowl, combine avocados, tomato, corn, green onions and beans. In a small bowl, whisk together the lime juice, oil, salt & pepper. Pour over the avocado salad and toss.
