Emma’s Pasta Salad
We often make a huge batch of this for lunch during the summer and school year. It packs perfectly in her lunchbox and is a good alternative/little fresher than a sandwich and chips every day. Sometimes we also add grilled chicken, too.
1/2 box of rigatoni, cooked and rinsed with cold water
all cut into bite-size pieces :
small cucumbers
cherry tomatoes
yellow or orange pepper
genoa salami
….
kalamata olives
green olive
mimi mozzarella balls
pepperoni slices
….
3 tablespoons of red wine vinegar
3 tablespoons of olive oil
1/4 tsp of dried Italian herbs
1 tsp of sea salt
cracked pepper
