I can’t get enough of pesto this summer. This pasta was especially satisfying – sautéed summer squash tossed with hot fusilli and pesto, with cold cherry tomatoes at the end. I have served it was Grilled Lemon Chicken or Cedar Plank Salmon.
Pesto Pasta with Squash & Cherry Tomatoes
Fusilli Pasta (or Penne)
Yellow Squash (or zucchini, or both)
Olive Oil
Sea Salt
Homemade Pesto Sauce (easy)
Cherry Tomatoes, halved
Parmesan Cheese
Pasta : Cook pasta in salted water, according to directions making sure to cook slightly al dente and do not rinse the pasta after cooking, put it straight into the pot with pesto and squash, as follows.
Sauté squash in olive oil in a large sauté pan. Season with salt. Remove from heat. Add pesto and cooked pasta. Toss together. Add cherry tomatoes and lots of parmesan cheese.
