Grilled Bread with Fresh Mozzarella

We often make this along with grilled chicken or steaks (favorite recipe here) when we have the grill on. When the steaks come off, the bread goes on. By the time the steaks have rested, the cheese has melted just in time for dinner.

Baguette

Olive Oil

Garlic Clove

4oz. Fresh Mozzarella, sliced

Chives (optimal)

Cracked Pepper (optional

Pre-heat grill. Slice baguette in half lengthwise. Drizzle with olive oil. Grill bread facedown for 1-2 minutes, just until toasted. Cut garlic clove in half, the rub it on the grilled bread. Top with slices of fresh mozzarella. Put it back on the grill (top rack or indirect heat) for the cheese to melt – about 5 minutes. I like to put it on the top rack so the bottom doesn’t get burned. Sprinkle chives and cracked pepper on top before serving.
