Classic Greek Salad

I’ve been trying to be better about having our refrigerator stocked with healthy options for lunch.

Early in the week, I (try to) prep containers full of mix-and-match salad ingredients. These are our favorite that actually have me craving a salad for lunch. It also makes it so much easier to come up with adding a salad to dinner every night. I’ve included some menu ideas below.

Red Wine Vinaigrette

I have been using this dressing on everything lately. The key is grating a fresh clove of garlic on a fine microplane right into the vinaigrette. I mix mine up in this small Farmhouse Pottery creamer. I pour everything in, then whisk it up with a fork.

1/4 cup of olive oil
1/4 cup of red wine vinegar
1 garlic clove, grated
1 teaspoon of sea salt
1/2 teaspoon of cracked pepper
1/2 teaspoon of dried Italian seasoning

Salad :

I often swap the feta for parmesan and turn this into an Italian salad – another favorite.

Greens*
Peppers
Cucumbers
Tomatoes
Red Onion
Feta Cheese (or parmesan)
Kalmata Olives

Protein :

Grilled Chicken
Salami, cubed

*Letting your greens crisp up in cold water before spinning dry is a game changer for salads. I like red leaf lettuce, baby Bibb, or romaine.
